• Cromal with Clynelish
• Clava brie with Royal Lochnagar
• Connage Dunlop and Smoked Dunlop with the big flavoured Talisker

Peter is hanging the Crowdie bags so the whey can drain from the curd and once we are happy with the texture we then pot. Whilst bagging off the curd early in the morning, there is a wonderful lemony aroma, making our mouths water and ready to reach for a piece of toast, tomato and a cup of tea

The team here are delighted with our success this year. Our girls (cows) produce wonderful creamy milk from grazing on our home grown clover rich fields which are high in Omega 3.
This quality is reflected in our cheeses.

Will Studd visit

We are fortunate to have had Will Studd visit us from Australia.
Will has written a fabulous book called ‘Cheese Slices’ and a most interesting and informative read.
Randolph Hodgson OBE from Neal’s Yard Dairy says ’in this book Will deals with the complexities of cheese head-on. He has travelled widely and has a huge amount of technical information at his fingertips. He explores different landscapes, animal breeds and cheese-making, although this is not a technical book. It is a beautiful and approachable book, one that is easy to dip into and come out with another interesting morsel of information. Above all it will stimulate us to eat and learn and keep the revolution going’
